Jumping for joy

We play the Bahama’s vinyl in our house a lot and whenever this song comes on it just makes me so happy, it’s so sweet & true. I love this growing family a lot, and as the months pass by and years start to show I really am jumping for joy. I am so thankful everyday for the joy & love that God shows us through our babies. 

Bump Update :: 27 Weeks

Our second little girl has hit the 27 week mark, only about 3 more months until she enters our lives. This pregnancy has been really great so far, I remember when I was pregnant with Poppy thinking that I could not imagine going through this while taking care of a toddler, but I’m very thankful that this pregnancy has been easier and I haven’t felt that way. Because my bump is growing slowly I tend to think I’m not as pregnant as I am, but I have definitely accepted that I need to take it easier on my body; not standing or walking long and allowing myself to just lay on the couch and rest during nap times. 
As soon as we found out that this babe was going to be a girl I immediately started to try and decide on a name for her. I’m definitely not the type of person that could have a baby born for days before deciding on the right name, I like to name them and know them months before that. I have 2 names that I’m in love with and ready to give her, but David doesn’t quite feel the same urgency to pick and continues to tell me to keep thinking… I feel like I have pretty much gone through every possible name & word that exists, and I have chosen. Hopefully we will settle on one soon 😉 
This pregnancy is very different for both David and I. When we see my stomach moving we feel much more connected to that little girl moving around. Imagining what she looks like and what her personality is. Last time we of course fell in love with Poppy right away but she was still “just a baby” we had no idea what her personality was because we had nothing to compare it to. But we’re really excited to meet our girl this time and see all the ways that she is her own little person. 

Healthy Chocolate Cookies

We have spent most of today outside in the warm weather, and so naturally around 2 o’clock I started to crave something sweet & cold. I scrolled through my recipe board on Pinterest and came across these no bake healthy chocolate cookies. They were super quick & easy & yummy so I figured I would take some photos of Poppy devouring them and share the recipe! 

Recipe adapted from Frugal Farm Wife 

1 cup Natural Peanut Butter or other Nut butter (I used Sunflower Butter since I have a nut allergy)
3/4 cup honey 
1/2 cup coconut oil or butter
2 teaspoons vanilla
2 1/4 cups Oats 
6 tablespoons cocoa powder
Sea Salt

Combine first three ingredients in a sauce pan and warm gently on stove top. Once everything is melted add the vanilla, oatmeal, and cocoa, and stir well.

Drop by the spoonful onto a lined baking sheet, sprinkle with Sea Salt and let cool in the fridge or freezer (I did freezer so they were nice and cold quick!). Store in the fridge.
