I have been wanting to do this for a while, and entering a fall pregnant seemed like a pretty good time to stock up the freezer. I made what Pinterest would call “dump dinners” – sounds yummy. Just a bunch of ingredients thrown in a ziplock bag, frozen and ready to be cooked in the crockpot. It only took be about 3 hours from leaving the grocery store to the kitchen all cleaned up, I made 8 meals (I would have loved to do larger quantities but we have a smaller drawer freezer).
The prep of this meal was especially easy, just dumping cans. I have yet to try this one, but I’m excited too.
This meal was really delicious served over rice. I would recommend leaving the coconut milk out of the freezer bag and adding it to the crockpot at cooking time, It was quite separated and not creamy by the time it thawed so I ended up adding another can after cooking it.
Instead layering this recipe as the instructions say, I just broke the noodles in half and put everything in the ziplock. It wont be a tradition style of lasagna but I anticipate it turning out yummy still, i’ll keep you posted!
I love have homemade pasta sauce in the freezer, so I added this simple recipe to the list and didn’t turkey instead of beef and we ate it over zucchini noodles.
I doubled the recipes (bolognese I didn’t need to double) and ended up with 8 decent sized bags (2 of each) so that we would have enough in each for dinner and next day lunch.
