Weekly Menu – April

MONDAY

Smoked Salmon Pizza
-We love homemade pizza, It’s my easy meal go to (since I buy the crust). I buy thin crust from our grocery store bakery and then just get creative with the toppings. I saw this recipe pop up on Pinterest and had to try it since we loveeee smoked salmon. It was amazing, best pizza yet!

Instead of the cream cheese dill mixture I just did olive oil and sprinkled the dill & garlic on top to make it a bit lighter & fresher. 

TUESDAY

Salad Rolls
-I posted a photo of these on instagram and had a few people asking for the recipe. They were so easy and SO delicious, I think our new favourite meal. David just came down and had the left overs for lunch and exclaimed his love for them. I googled a tutorial on how to use the Rice Paper Wrappers (super simple) and then I filled them with 

  • Grated Carrots (i just pulse them in the food processor)
  • Baby Corn 
  • Red Cabbage
  • Jalapenos
  • Avocado
  • Basmati Rice (You could easily leave this out and not have to cook anything at all for this meal!)
  • Radish

Miso-Lime Dipping Sauce

  • 1/4 Cup Mayo
  • 1 Tbs Miso Paste
  • 1 Tbs Lime Juice
  • 1 tsp Soy Sauce

WEDNESDAY

Veggie Spaghetti Bolognese
-We don’t eat a lot of pasta or meat but sometimes I just want a comforting Italian meal. This recipe was a good hearty veggie sauce.

THURSDAY

Spanakopita
-Another meal that David loses his mind for, and it’s relatively easy. The only hard part about this is working with Phyllo pastry, which I realized isn’t so hard if you remember to defrost it ahead of time! In this recipe she says to do it on a baking sheet, I just butter a cast iron pan and make it right in there. 

FRIDAY

I don’t plan meals for fridays or weekends because we usually go out or have people for dinner. 

LUNCH

Feta & Spinach Frittata
-David works from home so I like to keep something hearty in the fridge he can grab for lunch. This week I made a frittata, I used this recipe but instead of the mushroom I added cooked rice.
