Healthy Chocolate Cookies

We have spent most of today outside in the warm weather, and so naturally around 2 o’clock I started to crave something sweet & cold. I scrolled through my recipe board on Pinterest and came across these no bake healthy chocolate cookies. They were super quick & easy & yummy so I figured I would take some photos of Poppy devouring them and share the recipe! 

Recipe adapted from Frugal Farm Wife 

1 cup Natural Peanut Butter or other Nut butter (I used Sunflower Butter since I have a nut allergy)
3/4 cup honey 
1/2 cup coconut oil or butter
2 teaspoons vanilla
2 1/4 cups Oats 
6 tablespoons cocoa powder
Sea Salt

Combine first three ingredients in a sauce pan and warm gently on stove top. Once everything is melted add the vanilla, oatmeal, and cocoa, and stir well.

Drop by the spoonful onto a lined baking sheet, sprinkle with Sea Salt and let cool in the fridge or freezer (I did freezer so they were nice and cold quick!). Store in the fridge.
